cupcakes were the last thing I made in my Astoria apartment. They were born out of the pumpkin frenzy i was experiencing.
Pumpkin Chocolate Chip Cupcakes*!
Here's the recipe.
The cakes themselves were very dense. I used about a 1/3 cup of honey, which I didn't like the sound of. I don't like the taste of honey to begin with, but understand it's sometimes necessary in recipes. However, the 1/2 cup of honey recommended was a tad much and it wasn't just a sweetener, it took a bit of the pumpkin flavor away from it. and that's the best part! But the cream cheese frosting was lighter than than i thought it would be so the combination was quite delightful. And so much chocolate!
*Cupcakes and Muffins are differentiated by a few simple things: Cupcakes have frosting, and are sweeter. Muffins are considered to be a breakfast food, cupcakes can be substituted for wedding cakes! So....the recipe says "Muffins" but, they were definitely a dessert for me, and oh yea i drenched them with frosting.
